Steak Bites Recipe
Some meals just work. They come together quickly and are delicious. For us, Steak Bites are one of those meals. They deliver all the flavor you crave from steak while remaining budget-friendly—perfect for feeding the entire family.
What I love most about this dish is how it fits into our busy lives. It’s fancy enough to serve guests (especially if you make some Blue Cheese Pan Sauce to go with it), but simple enough to put together after a long day.
Why Sirloin Steaks?
Though often overlooked, sirloin steaks are a hidden gem. They’re lean, flavorful, and just the right size for recipes like this. Most importantly, they’re budget-friendly. When you start with high-quality beef, even a simple recipe like Steak Bites becomes something special. Cutting the steak into bite-sized pieces makes it cook quickly and evenly, and each piece develops a beautiful sear. Add a pan sauce, and you have a dish that feels indulgent without the cost of a pricier cut. It’s the perfect way to enjoy steak on a budget.

Ingredients
For the Steak Bites
2 (1 lb each) sirloin steaks (about 2 lbs total), trimmed and cut into 1" cubes
Salt and pepper, to taste
3–4 tbsp olive oil or butter (or a combination of both)
Garlic Butter Sauce
4 tbsp butter
4 cloves garlic, minced
2 tsp fresh thyme or rosemary, finely chopped (optional)
Salt & Pepper To Taste
Blue Cheese Pan Sauce
2 cloves garlic, smashed
1/2 cup heavy cream
1/3 cup crumbled blue cheese
1 tsp Worcestershire sauce
Instructions
Prep the Steak
Remove the sirloin steaks from the fridge about 30 minutes before cooking to bring them to room temperature.
Pat the steak cubes dry with a paper towel to remove excess moisture, then season generously with salt and pepper.
Sear the Steak Bites
Heat 3–4 tbsp of olive oil or butter in a large skillet over medium-high to high heat.
Arrange the steak cubes in a single layer. Do not overcrowd! You may have to do a couple batches. Sear for 2–3 minutes.
Flip and sear for another 2–3 minutes on the second side.
For medium-rare (about 130–135°F final temperature), remove the steak cubes from the heat when they reach 125°F. They will continue to rise in temperature during the rest (carryover cooking).
Rest the Steak
Transfer the steak bites to a plate or bowl.
Loosely tent with foil to keep them warm and let them rest for a couple of minutes. This rest time helps the meat retain its juices and finish cooking to the perfect doneness.
Make the Sauce
While the steak rests, use the same skillet (with all the tasty browned bits) to prepare your sauce of choice.
A) Garlic Butter Sauce
Reduce the heat to medium.
Add 4 tbsp butter to the skillet. Once it melts, stir in the minced garlic and optional herbs.
Sauté for about 30 seconds, just until fragrant—watch carefully to avoid burning the garlic.
If desired, add a splash of Worcestershire sauce or extra beef broth to deglaze and loosen the browned bits. Season with Salt & Pepper to taste.
B) Blue Cheese Pan Sauce
Reduce the heat to medium.
In the same pan, add the garlic and sauté for about a minute.
Pour in the heavy cream, scraping up the browned bits from the pan.
Stir in the crumbled blue cheese and Worcestershire sauce. Let it simmer until the sauce thickens slightly and the cheese melts into a creamy texture.
