From Our Farm Kitchen: Chorizo Potato Soup

It's the kind of cold that takes your breath away today. There’s something about days like this that call for soup—the kind that warms you from the inside out, that fills your kitchen with the best scent. Today as the tiniest snowflakes fell outside, I made Chorizo Potato Soup.

This recipe is one of my favorites, not just because it’s delicious (it is), but because it’s simple. And the secret to that simplicity? Always having good sausage on hand. That’s the trick I’ve learned over the years—when you have flavorful, quality, quick-cooking meats, meals come together easily. Whether it’s a hearty soup like this, a quick skillet pasta, or even breakfast for dinner, sausage is the little magic ingredient that makes it all work.

So here it is—my go-to recipe for cold days when I want to fill the house with warmth.

What to Pair with Chorizo Potato Soup

This hearty soup is the star of any meal, but pairing it with the right sides can turn it into a full feast. Here are a few ideas:

  1. Crusty Bread: A warm, crusty loaf is the perfect companion for soaking up every last drop of soup. Try sourdough or a rustic baguette.

  2. Side Salad: Balance the richness of the soup with a crisp, fresh salad. A simple mix of greens with a vinaigrette works great.

  3. Roasted Vegetables: A tray of roasted carrots, parsnips, or brussels sprouts adds a lovely side dish that complements the soup’s flavors.

  4. Cheese Plate: Serve with a small cheese plate featuring sharp cheddar or creamy brie to nibble on alongside the soup.

The Secret Ingredient for Simple, Flavorful Meals

Sausage is a game-changer in the kitchen. It’s packed with so much flavor that you don’t need a dozen spices to create a great meal. It cooks quickly, which is perfect for busy nights, and it’s endlessly versatile. Toss it into a pasta with fresh veggies, add it to a soup or stew, or use it in breakfast casseroles—it works for every meal of the day.

At the Farm Store, we offer a variety of sausages—Chorizo, Italian, brats, and breakfast links—all made with care and packed with flavor. Having them on hand means you’re never far from a homemade meal that’s both easy and delicious.

Enjoy!
