How to Make Smash Burgers
Step away from the grill. Get your cast iron skillet out and make yourself a smash burger. You may never return to making regular old burgers. They are that good. Smash burgers are thin burgers known for their crispy, extra flavorful crust with their juicy center. Load up your lightly toasted bun with mayo, lettuce, tomato, onion, and all your favorite other toppings.

What's the key to making smash burgers? Start with good ground beef. Ideally it is 85% lean. Do NOT use preformed patties for this recipe.
Ingredients:
-1/2 teaspoon vegetable oil
-1 lb ground beef (for 4 patties)
-Salt & Pepper to taste
-Cheese slice
-Hamburger buns
-Toppings (lettuce, tomato, onion, mayo, etc)
Directions:
1. Allow skillet to warm to medium heat for about 5 minutes. During this time section beef into four portions. Do not make patties. Season with salt and pepper on all sides. Prepare the buns and all your toppings.
2. Once skillet is heated, brush vegetable oil in pan. Place one portion of beef on the skillet. Immediately smash the burger with a stiff metal spatula until you form a thin patty.
3. After about 1 1/2 minutes on the skillet flip the burger. If you are going to add cheese do so after you flip the burger. Depending on desired doneness and thickness of your burger, allow this side to cook for about another minute or so.
4. Get a bun and load up your burger with all your favorite toppings. Enjoy!
