Ground Beef Kebab Recipe
Over here we are very, very ready for warmer days to finally arrive. We have yet to see more than a day or two of Spring weather. I am ready for temperatures that do not require jackets; sunshine that warms your face; cattle on green pasture; and blooms.
For me, the seasons change my recipe lineup. Fall and Winter call for hearty, warm meals made in the oven or over the stove top. Spring and Summer are for fresh, lighter meals made on the grill or in the smoker. Right now, I am over making the Winter meals. I do not want to make another pot of chili. Which leads me to this weekend. I decided to make one of my Summer meals; and my husband graciously agreed to grill in the snow. If you love gyros, you will enjoy these Ground Beef Kabobs with Cucumber Sauce. To me, they taste like Summer which is exactly what I was looking for. They can be made as Kabobs and grilled or can be rolled into meatballs and baked.
Ingredients:
2 Lbs Ground Beef
2 Cloves Garlic (minced)
1/4 Cup Onion (finely diced)
3 Tablespoons Fresh Flat Leaf Parsley (chopped)
1 Tablespoon Ground Coriander
1 Teaspoon Salt
1 Teaspoon Cumin
1/2 Teaspoon Allspice
1/2 Teaspoon Cinnamon
1/4 Teaspoon Cayenne Pepper (optional)
1/4 Teaspoon Ground Ginger
Black Pepper
Cucumber Sauce
1 Clove Garlic (minced)
3/4 Cup Plain Greek Yogurt
1 Lemon
1/2 English Cucumber (diced)
1 Teaspoon Olive Oil
Salt & Pepper (to taste)
For Serving
Pita
Red Onions
Tomato
Process:
1. In a large bowl mix the ground beef, garlic, onion, parsley, coriander, salt, cumin, allspice, cinnamon, cayenne pepper, ginger and black pepper.
2. Refrigerate for 30 minutes.
3. IF making kebabs, form the meat around the skewers. Grill until cooked thoroughly. Turn the skewers periodically to avoid burning.
IF making meatballs, form the meat into meatballs. Bake at 400 degrees for 20 minutes or until cooked through.
4. Make cucumber sauce by mixing garlic, Greek yogurt, lemon, cucumber, olive oil, and salt & pepper to taste into small bowl.
5. Serve kebabs or meatballs with cucumber sauce, onions, tomatoes, cucumbers, and pita.
